Menu Plan Monday

I have long intended to get more organized with our weekly menu by doing as much food prep the weekend before. Menu Plan Monday is really a good way to get me motivated. Be sure to check out some of the other Menu's here!

This week's Menu in the Kelly household is:

Monday-Lasagna and rolls (Both were prepared yesterday afternoon/evening and are ready to be finished off tonight.)

Tuesday-Teriyaki Chicken with Broccoli (I hope to prepare the Chicken tonight as it needs a good couple of hours to marinade.)

Wednesday-Bacon Wrapped stuffed Chicken Breasts and Brown rice cooked in Red Wine (Rachel Ray did this yesterday morning and BSP and I were hooked so that's a must for this week! Also hope to do the prep for this tonight)

Thursday-Spaghetti and Meatballs. (Again, the meatballs will be made tonight and added to the sauce so when Thursday rolls around I need only put it all on the stove.)

Friday-Homemade tortilla's stuffed with seasoned Beef (Haven't got ANYTHING other than the Beef thawing ready for this one so I'm guessing prep may have to come later in the week.)

I don't usually plan Saturday and Sunday until the weekend arrives because there's always a good chance we will be out on the Harley for at least part of the weekend.

I have all of the meat thawed and in the fridge just waiting to be prepped. My plan was to have it all done and prepped yesterday but King James and Prince Ethan were over last night and King James is grandma's boy so Grandma doesn't get too much done when he's over for a visit. (That's ok, I'd much rather hang with him and the Prince any day!)

Gosh, I already feel so much more productive and organized.(Don't ruin the moment for me, it doesn't come around all that often!!)

I admire your planning skills! I always do much better with cooking when I plan ahead, but I find it hard to stick with it.
